Ingredients:
- 1/4 cup of chia seeds
- 1 cup of mashed banana (about 2 large bananas)
- 1/2 cup of old fashion oats
- 1/2 tsp of baking soda
- 1/4 tsp sea salt
- 1/4 cup maple syrup
- 1 tbsp lemon juice
- 1/2 cup frozen wild berries or regular blueberries
Instructions:
- Place chia seeds and oats in the blender and blend on high until finely ground.
- Add the rest of the ingredients (except for berries) to the blender and mix until all combined and smooth.
- Stir in berries and fill paper lined mini muffin pans. Makes about 20 muffins!
- Bake on 375 for about 20 minutes! I always double these and keep extras in the fridge or freezer!
