Breakfast Recipes, Recipes Blueberry mini muffins March 29, 2019 Ingredients:1/4 cup of chia seeds1 cup of mashed banana (about 2 large bananas)1/2 cup of old fashion oats1/2 tsp of baking soda1/4 tsp sea salt1/4 cup maple syrup1 tbsp lemon juice1/2 cup frozen wild berries or regular blueberries Instructions:Place chia seeds and oats in the blender and blend on high until finely ground. Add the rest of the ingredients (except for berries) to the blender and mix until all combined and smooth.Stir in berries and fill paper lined mini muffin pans. Makes about 20 muffins!Bake on 375 for about 20 minutes! I always double these and keep extras in the fridge or freezer!
