Ingredients:
- about 3 handfuls of chopped romaine
- 1 cup of chopped cucumbers, bell peppers, tomatoes, red onions and any other veggies you like.
- 1/2 cup of garbanzo beans drained. (I like to add the garbanzo bean mixture from the chickpea tacos.)
- a few tbsp of pumpkin or sunflower seeds
- 1-2 tbsp of hemp seeds
- 1/2 c cooked quinoa
Directions:
- Place all above ingredients in a bowl. Toss in a few tbsp of lemon avocado dressing and enjoy!
