Ingredients:
- 2 cups Water
- ¼ tsp salt
- 1 cup Quinoa
Directions: Bring water and salt to a boil. Add rinsed quinoa. Remove form heat and cover for 20 minutes. Or cook with rice cooker.
Dressing:
- 1 Tbsp fresh basil (1/4 tsp dry basil)
- 1 tsp fresh oregano (1/4 tsp dry oregano)
- ¼ tsp salt
- 2 Tbsp balsamic vinegar
- 1 Tbsp olive oil
Salad:
- 1-2 cucumbers, chopped
- 1 bell pepper, chopped
- ¼ cup green onions
- 1-2 tomatoes, chopped
- 15 oz can garbanzo beans, rinsed
- 1/3 cup feta cheese
Directions: Add dressing and quinoa to salad in a bowl, mix and enjoy!
