Quinoa Salad

Ingredients:

  • 2 cups Water
  • ¼ tsp salt
  • 1 cup Quinoa

Directions:  Bring water and salt to a boil.  Add rinsed quinoa.  Remove form heat and cover for 20 minutes.  Or cook with rice cooker.  

Dressing:

  • 1 Tbsp fresh basil (1/4 tsp dry basil)
  • 1 tsp fresh oregano (1/4 tsp dry oregano)
  • ¼ tsp salt
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil

Salad:

  • 1-2 cucumbers, chopped
  • 1 bell pepper, chopped
  • ¼ cup green onions
  • 1-2 tomatoes, chopped
  • 15 oz can garbanzo beans, rinsed
  • 1/3 cup feta cheese

Directions:  Add dressing and quinoa to salad in a bowl, mix and enjoy!
