    Granola- Cereal or snack

    Serves abot 2-3

    Ingredients:

    • 1/2 cup rolled oats 
    • 1/2 cup macadamia nuts
    • 1/2 cup blueberries
    • 1/2 cup Almond meal/flour
    • 1 apple, cored
    • 1/4 cup walnuts
    • 1 teaspoon of cinnamon
    • 1 teaspoon of honey (or maple syrup)
    • Almond milk (or eat it dry)

    Mix rolled oats, macadamia nuts and blueberries in a bowl and toss together.  In a food processor blend the apple (cored), cinnamon, walnuts and honey together. It will form an apple crumble-type consistency. Add more honey if it is not sticking in clumps. Add the clumps to the bowl of oat mixture and mix. 

     Pour the almond milk over it for a bowl of cereal or eat as a snack.

    Add any other fruits of your choice, Flax seeds or hemp seeds for more protein, or Tiger Nuts for more iron!!!

    Blender waffles

    Ingredients:

    • 1 cup of hard red wheat berries or whole spelt.
    • 1 cup of almond milk with 1 tbsp of lemon juice 
    • Place above 3 ingredients in a blender and let set for 5 minutes.  Next, blend until smooth.
    • Next add to blender:
    • 1/2 cup of coconut oil
    • 1/2 cup of almond milk
    • 2 eggs
    • 3 tsp of baking powder
    • 1 tsp of salt

    Instructions:

    1. Blend all above ingredients and pour in waffle maker.  Top with granola, coconut chips, bananas, blueberries and maple syrup.  Or any of your favorite toppings!

    Avocado Toast

    Ingredients:

    • Sprouted whole grain english muffin
    • Avocado
    • Sugar plum tomatoes sliced
    • Fresh cilantro
    • Everything Bagel seasoning

    Directions:

    1. Toast your muffins
    2. Mash your avocado
    3. Spread your toast with avocado, seasonings, cilantro a dash of lemon juice and tomatoes!
    4. You can get real creative with these.  Any toppings tor spices that sound good.  If you are avoiding gluten or just want another option then     bread,  brown rice cakes are a great option.

    Acai Bowls

    Ingredients:

    • 4 cups of a mix of frozen fruit pineapple, strawberry, cherries, blue berries or any frozen fruit you have on hand.
    • About 1 cup of Acai juice or preferred liquid.  Water, non-dairy milk- coconut water or milk apple juice etc.
    • Toppings:  Pick your favorite  fresh fruit (bananas, blue berries, strawberries etc.) , goji berries, granola, shredded coconut, cacao nibs drizzled with honey.

    Directions:

    1. Put frozen fruit and liquid in high-speed blender.  Mix until it’s all combined into a thick smoothie like consistency.  If it’s not blending, add a little more liquid.   Decorate with toppings of your choice and enjoy!!

    My favorite Old fashion oats

    Ingredients:

    • 1/2 cup of old fashion oats
    • 1 Tbsp of chia seed
    • 1/2-1 cup of boiling water
    • Almond milk
    • Wild blueberries or any frozen fruit of your choice
    • Sweetener of choice- maple syrup, coconut sugar or honey
    • 1 Tbsp of ground flax

    Directions:

    1.  Boil a few cups of water
    2. Add oats, chia and boiling water to a bowl and let sit for about 5 minutes
    3. Then add flax, fruit, sweetener of choice, and milk.
    4. Enjoy!!

    Buckwheat Pancakes

     

    Ingredients:

    • 2 cup rice flour
    • 1 cup buckwheat flour
    • 1 1/2  cups water
    • 2 tsp salt
    • 4-5 Tbsp honey or maple syrup
    • 2 eggs or 2 flax eggs (1 tbsp flax with 3 tbsp of water = 1 egg)
    • 2 tsp vanilla
    • 1 tsp baking soda

    Directions:  Mix all ingredients in a bowl until smooth.  Use coconut oil or avocado spray on pan and pour mix onto hot griddle.

    Top strawberries, blueberries and maple syrup.  Another favorite is chopped pecans, bananas and pure maple syrup!

    Banana oat Pancakes

    Ingredients:

    • 2 cups of oat flour
    • 1 cup of almond flour
    • 2 tbsp of baking powder
    • 1 tsp cinnamon
    • 1 tsp nutmeg
    • 1/2 tsp salt
    • 2 tbsp ground flax
    • 2 bananas
    • 2 cups of almond milk
    • 2 tbsp honey
    • 2 tsp of vanilla
    • coconut oil or avocado spray for pan

     

    Directions:

    1. Mix flax with 6 tbsp of water in a bowl set aside of 5 minutes .  Will form a gel like liquid.  
    2. Next combine flours, spices, baking powder and salt set aside.
    3. In another bowl mash bananas then add milk, honey and vanilla.  Pour in the flax mixture and mix.  
    4. Mix all the wet with the dry and your ready to go.  Heat pan, coat with a little oil and cook until both sides are golden brown.  
    5. Top with nuts and fruit! Enjoy!

    Blueberry mini muffins

    Ingredients:

    • 1/4 cup of chia seeds
    • 1 cup of mashed banana (about 2 large bananas)
    • 1/2 cup of old fashion oats
    • 1/2 tsp of baking soda
    • 1/4 tsp sea salt
    • 1/4 cup maple syrup
    • 1 tbsp lemon juice
    • 1/2 cup frozen wild berries or regular blueberries

    Instructions:

    1. Place chia seeds and oats in the blender and blend on high until finely ground.  
    2. Add the rest of the ingredients (except for berries) to the blender and mix until all combined and smooth.
    3. Stir in berries and fill paper lined mini muffin pans.  Makes about 20 muffins!
    4. Bake on 375 for about 20 minutes!  I always double these and keep extras in the fridge or freezer!

    Banana Muffins

    Ingredients:

    • 3/4 cup of almond flour
    • 3/4 cup of brown rice flour
    • 1/2 cup of ground flax seed
    • 1 tsp of baking soda
    • 1 tsp of baking powder
    • 1/2 tsp of salt
    • 1 flax egg ( 1 tbsp of ground flax with 2 1/2 tbsp of water) let sit for about 5 min
    • 1/2 cup of honey
    • 2 large bananas, mashed
    • 1/2 cup of unsweetened applesause
    • 1/4 cup of almond milk or any dairy-free milk

     

    Directions

    1. Combined dry ingredients in a bowl
    2. Combined wet ingredients in a bowl
    3. Add dry mixture to the wet an stir until blended
    4. Spoon about 2/3 full into paper liners.
    5. Bake on 350 for 20 min.  

    I have substituted all almond flour for the brown rice flour and it still turns out great!  For the apple sauce,  I use the little organic individual cups it’s the perfect size for this recipe. I also like to cook mine a little longer until the tops are a bit golden brown.  It gives it kind of a crunchy top with a super moist inside!  TIP!! Don’t let your kids have any of these!  They are soooo yummy and you wont have any left for later in the week!!  HEHEHEHE!!!
