Ingredients:
- 2 cup rice flour
- 1 cup buckwheat flour
- 1 1/2 cups water
- 2 tsp salt
- 4-5 Tbsp honey or maple syrup
- 2 eggs or 2 flax eggs (1 tbsp flax with 3 tbsp of water = 1 egg)
- 2 tsp vanilla
- 1 tsp baking soda
Directions: Mix all ingredients in a bowl until smooth. Use coconut oil or avocado spray on pan and pour mix onto hot griddle.
Top strawberries, blueberries and maple syrup. Another favorite is chopped pecans, bananas and pure maple syrup!
