    Chickpea Chopped Salad

    Ingredients: 

    • about 3 handfuls of chopped romaine
    • 1 cup of chopped cucumbers, bell peppers, tomatoes,  red onions and any other veggies you like.
    • 1/2 cup of garbanzo beans drained.  (I like to add the garbanzo bean mixture from the chickpea tacos.)
    • a few tbsp of pumpkin or sunflower seeds
    • 1-2 tbsp of hemp seeds
    • 1/2 c cooked quinoa

    Directions:

    1. Place all above ingredients in a bowl.  Toss in a few tbsp of lemon avocado dressing and enjoy!

    Lemon avocado dip/sauce/dressing

    Ingredients:

    • 1/2 c vegan mayo
    • 4 tbsp of lemon juice
    • 1 medium avocado
    • about a tbsp of fresh parsley
    • 1/2 tsp salt
    • 1/2 tsp of garlic powder
    • pepper

    Directions:

    1. Put all of the above ingredients in a blender, mix until well blended.  This is great as a dip, salad dressing, or topped on just about anything.  Tacos, wraps, burgers!  Enjoy!

    Tropical Smoothie

    Ingredients:

    • Spinach
    • Frozen pinapple
    • Frozen Mango
    • Flax seeds
    • Dates

     

    Directions:

    This is a great recipe because it always turns out with no measurements.  I stuff my vita-mix half full of spinach.  Then I put in about a 1-2 cups each of frozen pineapple and mango.  I put in about 2 tbsp of flax seeds and 3-4 pitted dates.  Add water to the top of the spinach and blend!  This is a staple in our home for breakfast.  This makes about 6-7 cups of smoothie!  Enjoy!

    Green Machine Smoothie

    Ingredients: about 1-2 servings depending on how hungry you are!

    • 2 cups almond milk or any dairy free milk
    • 2 tbsp of almond butter
    • 1 tbsp of maca powder
    • 1 scoop of plantbased protein powder (Flavor is ok it will change the taste, which could add even more yummy flavor)
    • 1 large handful of spinach
    • 1 apple
    • 1 banana
    • 2 pitted dates
    • 4-5 cubes of ice

    Directions:

    1. Put the above ingredients in a blender and enjoy!

    Yum Yum Banana Boats

    Ingredients:

    • Bananas
    • Almond butter
    • Chocolate sauce
    • Cacao nibs
    • goji berries

     

    Directions:

    1. Slice your banana
    2. Butter with almond butter
    3. Drizzle with chocolate sauce
    4. Top with cacao nibs and goji berries

     

    Enjoy!

    • Chocolate Sauce:

    Ingredients:

    • 1/4 cup of coconut oil
    • 1/2 cup of maple syrup
    • 2/3 c of cacao powder 
    • MIx above ingredients on the  stove top until melted and it has become a sauce.  You can adjust amounts according to your liking.

    Buckwheat Pancakes

     

    Ingredients:

    • 2 cup rice flour
    • 1 cup buckwheat flour
    • 1 1/2  cups water
    • 2 tsp salt
    • 4-5 Tbsp honey or maple syrup
    • 2 eggs or 2 flax eggs (1 tbsp flax with 3 tbsp of water = 1 egg)
    • 2 tsp vanilla
    • 1 tsp baking soda

    Directions:  Mix all ingredients in a bowl until smooth.  Use coconut oil or avocado spray on pan and pour mix onto hot griddle.

    Top strawberries, blueberries and maple syrup.  Another favorite is chopped pecans, bananas and pure maple syrup!

    Banana oat Pancakes

    Ingredients:

    • 2 cups of oat flour
    • 1 cup of almond flour
    • 2 tbsp of baking powder
    • 1 tsp cinnamon
    • 1 tsp nutmeg
    • 1/2 tsp salt
    • 2 tbsp ground flax
    • 2 bananas
    • 2 cups of almond milk
    • 2 tbsp honey
    • 2 tsp of vanilla
    • coconut oil or avocado spray for pan

     

    Directions:

    1. Mix flax with 6 tbsp of water in a bowl set aside of 5 minutes .  Will form a gel like liquid.  
    2. Next combine flours, spices, baking powder and salt set aside.
    3. In another bowl mash bananas then add milk, honey and vanilla.  Pour in the flax mixture and mix.  
    4. Mix all the wet with the dry and your ready to go.  Heat pan, coat with a little oil and cook until both sides are golden brown.  
    5. Top with nuts and fruit! Enjoy!

    Dairy free veggie dip/ranch

    Ingredients

    • 1 cup just mayo or vegnaise
    • 1/2 cup coconut yogurt
    • 1/2 tsp dried chives
    • 1/2 tsp dried parsley
    • 1/2 tsp dried dill weed
    • 1-2 tsp garlic powder
    • 1/2 tsp onion powder
    • 1/2 tsp salt
    • 1/2 tsp ground black pepper

    Directions:  

    1. Whisk together mayonnaise,  yogurt and seasonings.  
    2. Cover and refrigerate for 30 minutes before serving. 
    3. Use to dip veggies in, mix in a salad or anything else you want to serve it with!
    4. I don’t ever measure seasonings.  I just sprinkle a little here and there add more of one or the other.  So the above is just a starting place,  season it to taste.  Good Luck!!,

    Delish cauliflower potato soup

    Ingredients:

      • 1 large head of Cauliflower
      • 2-3 small red potatoes
      • 1 c almond milk
      • 1 c chicken broth 
      • 1 c coconut yogurt
      • Salt and pepper to taste
      • 1 bunch of green onions, chopped

    Directions:

    1. Steam cauliflower and potatoes. 
    2. Puree cauliflower and potatoes in a  blender with broth and milk.
    3. Pour in pot, add yogurt, salt and pepper to taste and simmer until warm and ready to eat! 
    4. Top with green onions! Enjoy!!

    Mediterranean Salad, sandwich or bowl!

     

    Lemon Vinaigrette

    Ingredients:

    • 1/4 cup of extra virgin olive oil (Omit if you want oil free)
    •  1/4 cup fresh lemon juice
    • 1/2 tsp dried oregano
    • 2 garlic cloves, minced
    • 1/2 tsp maple syrup
    • 1/4 pepper

    Directions:  Mix all the above in a mason jar shake and it’s ready to go!  

    *It actually taste great without the added extra fat from the oil!

     Mediterranean Salad:

    Ingredients:

    • Mixed greeds of our choice. Spinach, arugula etc. about 5 cups.
    •  Bell peppers, cucumbers, cooked corn, diced tomatoes, red onions, golden raisins, toasted pine nuts, fresh cilantro.

    Directions:

    1. Put greens in large bowl
    2. Chop any of the above veggies you have on hand or just use your favorites and add as much as you want. 
    3. Add some golden raisins, toasted pine nuts and fresh cilantro.
    4. Toss with lemon vinaigrette.  Your salad is ready!

    *To turn this into a bowl add some quinoa or brown rice cooked in veggie or chicken broth, hummus and your salad .  Top it off with a little whole wheat pita to dip in and you’ll be in heaven!!

    * This can also be turned into a pita sandwich!
